Easy Soup Recipes for Cold Weather

It’s the holidays, and while you’re gathering with family and friends, when you get home at the end of a long cold day, you may have a craving for easy soup recipes. When it’s cold outside, there’s nothing better than soup to warm yourself. Here we’re going to give you a few healthy soup recipes and ideas as well as soup recipes with chicken for those of you who want to get that extra kick of protein in their soup. Healthy soup recipes are easy to find and all about finding the right ingredients to throw in. Our first recipe is Stuffed Pepper Soup and although it calls for beef you can substitute the beef for chicken, turkey or venison.

 

Stuffed Pepper Soup

Make the long grain wild rice according to the instructions on the package. At the same time in a saucepan cook the beef until it’s no longer pink and drain the grease. Once the meat is cooked add in the green peppers and onion. Once it’s sautéed a bit, stir in the pasta sauce, tomatoes, broth and the rice when it’s prepared. Heath until everything comes together as one of the great healthy soup recipes.

You will need a dutch oven to cook the sausage, according to the recipe and if you would like to make it an even healthier recipe use turkey sausage and half and half cream as just one cup of cheese to save on extra fat and calories.

 

Pumpkin Sausage Soup

In the Dutch oven cook the sausage, mushrooms and onion over medium high heat until the sausage is cooked through. Make sure that the vegetables are cooked through and soft, which will be after about 8-10 minutes. Once everything is cooked, break the sausage up into bits and drain everything. Add garlic, cook for 1 minute or until fragrant. Add in the chicken stock, pumpkin, sugar and seasonings. Bring everything to a boil and then reduce heat and simmer for around 10 minutes. Once everything is done cooking, stir in the cream, or half and half. In a bowl on the side mix together the water and cornstarch until it is smooth. Stir the mixture into the soup, bring it to a boil until it’s more thick. Add cheese and stir it until the cheese is melted. Serve hot and add any toppings you’d like.
