This is a common myth in the world of diabetes, but the truth is there isn’t one food group completely off limits. The goal instead is to understand carbohydrates and sugar and how they affect your blood glucose. Certain foods such as sweet, desserts and carb-heavy items should be eaten in limited quantities, but there is no reason not to enjoy a small treat on a special day such as your birthday or a holiday. In fact, there are many easy diabetic dessert recipes that can indulge your sweet tooth and help you feel like you aren’t missing out. Here are a few of our favorites:

Dark Chocolate Crackle Cookies

These delicious diabetic chocolate dessert from Prevention infuse applesauce to sweeten the taste naturally and keep cookies moist.

PREP TIME: 15 minutes
TOTAL TIME: 2 hours, 23 minutes + cooling time
SERVES: 32

¼ cup + 2 Tbsp omega-3-enriched tub margarine
¼ cup + 2 Tbsp unsweetened cocoa
2 tsp almond extract
¾ c brown sugar
¼ c + 2 Tbsp unsweetened applesauce
2 Tbsp honey
1 ¼ c white whole wheat flour
4 tsp granulated sugar

Directions

Place margarine in microwaveable mixing bowl. Cook 1 minute on high power, or until margarine melts. Add cocoa and almond extract. Stir until smooth. Add brown sugar, applesauce, and honey. Stir until smooth. Add flour and pinch of salt. Stir until no white is visible.
Cover bowl with plastic wrap and refrigerate for several hours or overnight, until dough is very stiff.
Next, heat oven to 350°F. Coat several baking sheets with cooking spray.
Place granulated sugar in small dish. Scoop out scant tablespoonful of the dough. Roll between palms into ball, flattening slightly. Dip one side into sugar and place, sugar side up, on prepared baking sheet. Continue until all cookies are shaped.
Bake 7 to 8 minutes, or until surface is set but still soft to the touch. Do not overbake. Allow cookies to cool on pan. Store in tightly covered tin.

Trail Mix Cookies

This recipe, courtesy of AllRecipes.com, contains a great mix of nuts and fruit.

1/2 cup applesauce

1/2 cup white sugar

1/2 cup brown sugar

1/2 teaspoons vanilla extract

2 egg whites

1 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 teaspoon ground cinnamon

1 1/4 cups quick cooking oats

1/2 cup semisweet chocolate chips

1/2 cup chopped walnuts

1/3 cup dried cranberries

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.

Beat applesauce, white sugar, brown sugar, and vanilla in a large bowl. In another bowl, use an electric mixer to beat egg whites until they are frothy and begin to firm up. Fold egg whites into applesauce mixture. Combine the flour, baking soda, salt, and cinnamon. Fold into the egg mixture. Stir in the oats, chocolate chips, walnuts, and cranberries. Drop by heaping teaspoons on prepared baking sheets.

Bake cookies in preheated oven until set and lightly browned, about 10 minutes. Remove immediately to wire racks to cool.

Crispy Peanut Butterscotch Pie

This creamy pie from CookingLight is a cool treat for diabetics during hot summer days.

1/4 cup creamy peanut butter

1 tablespoon honey

1 1/2 cups oven-toasted rice cereal (such as Rice Krispies)

1 (1-ounce) package butterscotch fat free, sugar-free instant pudding mix

2 cups fat-free milk

1 1/2 cups frozen fat-free whipped topping, thawed and divided

Ground cinnamon (optional)

Additional oven-toasted rice cereal (optional) 

Directions

To begin, combine peanut butter and honey in a medium microwave-safe bowl; microwave at HIGH 30 seconds, stirring until mixture melts. Stir in rice cereal. Using wax paper, press cereal mixture into bottom of an 8- inch round cake pan.

Prepare pudding mix according to package directions for pudding, using 2 cups milk; fold in 1 cup whipped topping. Spoon pudding mixture into prepared pan. Cover and freeze until firm. Let pie stand at room temperature 15 minutes before serving. Spoon remaining whipped topping over each serving. If desired, sprinkle with ground cinnamon and additional cereal.
