Low Carb Banana Bread

For all those who are on a low carb diet, it must be tiring to constantly look out for recipes that are not only healthy and low on carbohydrates, but delicious also. A low carb diet should include foods from where we can source both type of carbohydrates – simple and complex, but in the healthy way – like this low carb banana bread recipe.

Ingredients
ripe bananas, 3 medium size
flour, 2 cups
unsalted butter, ½ cup
eggs, 2
sour cream, ½ cup
sugar, 1 cup
baking powder, 1 tsp
baking soda, ½ tsp
salt, ½ tsp
vanilla extract, 1 tsp

Instructions: 

Step 1: Sift the flour, baking soda, salt and baking powder together over a flat plate. In a bowl, cream the butter, gradually add the sugar, add eggs one at a time, beating well with an electric mixer after each addition.

Step 2: Stir in the vanilla extract. Peel bananas, cut them into small pieces, and mash them with a fork.

Step 3: Measure out 1 cup of mashed banana, add the sour cream and stir, until well blended.

Step 4: Blend together 1/3 of the dry flour mixture into the butter mix. Keep adding the banana mix and the remaining dry flour mix alternately, stirring well after each addition.

Step 5: Pour the bread batter into the prepared loaf pan and smooth the top with a spoon.

Step 6: Bake in a preheated oven to 325oF.

Step 7: Insert a bread knife into the center of the bread, to check if it comes out clean. T ransfer the bread to a cooling rack and let it to cool down completely
