2 cups (500 mL) coarsely shredded cabbage
1/2 cup (125 mL) sliced celery
2 tbsp (25 mL) each finely chopped raisins and walnuts
1/4 cup (50 mL) low-fat plain yogurt
2 tbsp (25 mL) light mayonnaise
1/2 tsp (2 mL) fresh lemon juice
2 cups (500 mL) chopped apples (2 medium)
Salt and freshly ground pepper
Step 1: In bowl, combine cabbage, celery, raisins and walnuts.
Step 2: In small bowl, whisk together yogurt, mayonnaise and lemon juice; stir into cabbage mixture. Season your salad with salt and pepper to taste.
Step 3: Cover and refrigerate for at least 30 minutes, then stir in apples just before serving.
